Ingredients

- 3 ripe bananas, mashed
- 1/2 cup of sugar
- 1/4 teaspoon of salt
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon (optional)
- 1 cup of all-purpose flour
- 1/2 cup of walnuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the ripe bananas in a mixing bowl until smooth.
- Mix the dry ingredients (flour, baking soda, cinnamon, and salt) in another bowl.
- Combine the sugar and vanilla with the mashed bananas and mix until combined.
- Fold in the dry ingredients until just combined; avoid overmixing.
- Stir in walnuts or chocolate chips if desired.
- Bake the batter in a greased loaf pan for about 50 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Storage: Keep in an airtight container at room temperature for 3-4 days or freeze slices for up to 3 months. Reheat slices in the toaster or microwave.
