Description

Deliciously moist and sweet muffins combining ripe bananas and rich chocolate chips.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until combined.
  4. Add the baking soda and salt; mix well.
  5. Next, stir in the sugar, beaten egg, and vanilla until evenly mixed.
  6. Slowly fold in the flour until just combined.
  7. Finally, fold in the chocolate chips.
  8. Distribute the batter evenly among the muffin cups, filling them about 3/4 full.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Serve warm with butter or as a part of brunch. They can be stored in an airtight container for up to 3 days.
