- 3 cups diced potatoes (baby red or Yukon gold)
- 1 cup shredded cheddar cheese
- ½ cup BBQ sauce (homemade or store-bought)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Brown the beef: In a large skillet over medium heat, cook the ground beef until it’s well-browned, about 5-7 minutes. Drain excess fat.
- Add onions and garlic: Stir in the chopped onions and garlic, cooking until they’re soft and fragrant, around 3-4 minutes.
- Toss in potatoes: Mix in the diced potatoes, salt, and pepper. Keep stirring for about 5 minutes.
- Simmer it down: Pour in the BBQ sauce and about ½ cup of water. Cover and let simmer for about 15 minutes.
- Cheesy goodness: Remove the lid, sprinkle the shredded cheddar over everything, and reduce the heat to low. Cover again for another 5 minutes.
- Garnish and serve: Plate it up and sprinkle with fresh parsley.
