- 1 pound shrimp, peeled and deveined
- 1 cup seasoned breadcrumbs (panko)
- 1/2 cup mayonnaise
- 1–2 tablespoons sriracha (to taste)
- 1 tablespoon honey or sugar
- Juice of 1 lime
- Small corn tortillas
- Toppings: shredded cabbage, sliced green onions, cilantro, lime wedges
Instructions
- Preheat your oil: In a deep skillet, heat oil to about 350°F.
- Prepare the batter: In a bowl, mix shrimp with a pinch of salt and pepper. Dredge each shrimp in the breadcrumbs.
- Fry those shrimp: Carefully place the shrimp in the hot oil; fry for about 2-3 minutes on each side.
- Whip up the sauce: While the shrimp fry, combine mayonnaise, sriracha, honey, and lime juice in a bowl.
- Warm the tortillas: Lightly toast the corn tortillas in a dry skillet for 30 seconds on each side.
- Assemble: Spread the spicy sauce on the tortilla, top with crispy shrimp, and sprinkle your desired toppings.
Notes
Store leftover shrimp in an airtight container in the fridge for up to 2 days. Reheat in the oven to maintain crispiness.
