Ingredients

- 1 cup sugar (or ¾ cup for less sweetness)
- ½ cup brown sugar (dark for extra depth)
- 1 cup pumpkin puree (not pumpkin pie filling)
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour (or whole wheat)
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon pumpkin pie spice (optional)
- ½ cup nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the sugars, pumpkin puree, oil, eggs, and vanilla until smooth.
- In another bowl, mix the flour, baking soda, baking powder, salt, and spices until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If adding nuts or chocolate chips, fold them in now.
- Pour the batter into the greased loaf pan and smooth the top with a spatula.
- Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
