- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and buttermilk. Mix well until you have a smooth batter.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If you’re adding nuts or chocolate chips, fold them in now.
- Pour the batter into your prepared loaf pan and spread it evenly.
- Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
