- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- ½ cup buttermilk
- 2 tablespoons poppy seeds
- Juice of 1 lemon (about 3 tablespoons)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl. Set that aside.
- Cream the softened butter and sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the lemon zest.
- Alternate adding the dry ingredient mixture and the buttermilk, starting and ending with the dry ingredients. Stir until just combined; avoid over-mixing.
- Fold in the poppy seeds and lemon juice gently.
- Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
