Description
A thick, hearty homemade beef chili that’s perfect for warming up on chilly evenings and impressing friends at gatherings.

- 2 lbs ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 bell peppers, diced (red and green)
- 2 cans (15 oz each) diced tomatoes, with juices
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup beef broth
- Olive oil
Instructions
- Heat a large pot over medium-high heat. Add a splash of olive oil and toss in the ground beef, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Once browned, drain excess fat. Lower the heat to medium and add diced onions and bell peppers. Stir and let them soften for about 5 minutes.
- Toss in minced garlic, chili powder, cumin, and smoked paprika. Give it a good stir and let those spices toast for about a minute until fragrant.
- Add in the diced tomatoes (with juices), kidney beans, and beef broth. Bring everything to a gentle simmer and season with salt and pepper to taste.
- Cover and let it simmer for about 30 minutes, stirring occasionally. If it looks too thick, feel free to add a splash of water or more broth.
- Taste and adjust the seasoning if necessary.
Notes
Serve with sour cream, shredded cheese, and green onions. Great with tortilla chips, cornbread, or over baked potatoes.
