Description
Delicious buffalo chicken filling stuffed into fresh bell peppers for a spicy, healthy meal.
Ingredients

- 4 large bell peppers (red, green, or a mix)
- 1 lb boneless, skinless chicken breast or thighs, cooked and diced
- 1 cup buffalo sauce
- 1/2 cup diced celery
- 1/4 cup green onions, sliced
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off your bell peppers and remove the seeds and membranes. Set them aside.
- Combine the cooked chicken, buffalo sauce, celery, and green onions in a large bowl. Season with salt and pepper.
- Stuff the mixture generously into each prepared bell pepper until they’re packed full.
- Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom.
- Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until the peppers are tender.
- Remove from the oven and garnish with fresh parsley, if desired. Serve hot and enjoy!
