- 1 cup butter, softened
- 2 cups brown sugar
- 1 cup pumpkin puree
- 2 large eggs
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon nutmeg
- A pinch of salt
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the softened butter and brown sugar together until light and fluffy.
- Add the pumpkin puree and eggs into the mix, and stir until well combined.
- Whisk together the flour, baking soda, baking powder, spices, and salt in a separate bowl. Gradually add this dry mixture into the wet ingredients, folding gently to combine.
- If you’re adding chocolate chips, fold them in now.
- Scoop the dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Don’t overbake.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Serve with vanilla ice cream or whipped cream for an elevated experience. Store leftovers in an airtight container at room temperature for up to a week.
