  • 1 cup coconut milk (or regular milk)
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup chocolate chips (dark or semi-sweet)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder until well combined.
  3. Combine the coconut milk, vegetable oil, and eggs in another bowl and whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the shredded coconut and chocolate chips.
  6. Transfer the batter into your prepared loaf pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Let it cool for about 10 minutes in the pan, then transfer to a wire rack to cool completely.
