Description

A comforting and easy corn casserole that blends sweet corn flavor with a creamy, textured base, perfect for holiday gatherings.

Ingredients

Scale
  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 cup sour cream
  • ¼ cup unsalted butter, melted
  • 1 cup shredded cheese (cheddar or a blend)
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the Jiffy corn muffin mix, drained whole kernel corn, cream-style corn, sour cream, and melted butter in a large mixing bowl. Mix until just combined.
  3. Fold in the shredded cheese until evenly distributed throughout the mixture.
  4. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  5. Bake in the preheated oven for approximately 45 minutes, or until the top is golden brown and the center is set.
  6. Let cool for a few minutes before serving. If desired, garnish with chopped green onions.

Notes

Avoid overmixing to ensure a light and fluffy texture. Let the casserole sit for five minutes after baking for cleaner portions.
