Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts
- 6 cups chicken stock
- 1 cup uncooked pasta (ditalini or rotini)
- 2 cups fresh spinach, roughly chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: fresh herbs (like thyme or parsley) for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and carrots, sauté until the onion is translucent.
- Add the minced garlic and stir for about 30 seconds until fragrant.
- Toss in the chicken breasts and brown them for 3-4 minutes on each side.
- Pour in the chicken stock, bring it to a boil, and then reduce to a simmer.
- Add the pasta and cook according to package instructions, roughly 10-12 minutes.
- When the pasta is done, stir in the cream and spinach, cooking for an additional 2 minutes until the spinach wilts.
- Season with salt and pepper to taste, then serve hot.
Notes
Serve with fresh herbs and crusty bread for the perfect meal. Leftovers can be refrigerated for up to 3 days or frozen for up to three months.
