- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- Salt, to taste
- Pepper, to taste
- Optional: herbs like thyme or chives for garnish
Instructions
- Melt the butter in a large pot over medium heat. Toss in the chopped onion and garlic, sautéing until soft and fragrant, about 5 minutes.
- Add the corn (reserve some for garnish), broth, and season with salt and pepper. Bring to a simmer and cook for about 15 minutes.
- Blend until smooth with an immersion blender, or pulse a few times for a chunky texture.
- Stir in the heavy cream and taste for seasoning; adjust if needed.
- Heat through for another 5 minutes, then serve hot, garnished with fresh herbs if desired.
Notes
Serve with crusty bread or a crisp salad for a complete meal. Store leftovers in the fridge for up to 4 days.
