Ingredients
- Gnocchi (fresh or store-bought)
- Olive oil (extra virgin)
- Garlic (fresh cloves)
- Canned crushed tomatoes
- Heavy cream
- Fresh basil
- Burrata cheese
- Salt and pepper (to taste)
- Parmesan cheese (optional)
Instructions
- Heat a generous drizzle of olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant but not browned—about 30 seconds.
- Add the canned crushed tomatoes, stirring well. Let this simmer gently for about 10 minutes, allowing the flavors to concentrate. Stir occasionally and season with salt and pepper.
- In a separate pot, boil salted water and cook the gnocchi according to the package instructions.
- Once the tomatoes have thickened, reduce the heat and stir in the heavy cream, allowing it to meld beautifully.
- Drain the gnocchi and add them right into the sauce, tossing until well-coated.
- Tear the burrata into pieces and place on top. Allow it to warm through before scattering fresh basil and a sprinkle of Parmesan if desired.
- Serve hot, digging in while the burrata is soft and gooey.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Heat gently on the stovetop, adding a splash of milk or cream if necessary.
