Description
A comforting and creamy potato soup that’s easy to make in a crockpot with a secret ingredient for added flavor.
Ingredients
Scale
- 4–5 large potatoes, peeled and diced
- 1 onion, chopped
- 2–3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cups milk (or non-dairy equivalent)
- 1 cup shredded cheese (cheddar)
- 1/2 cup sour cream
- Salt and pepper to taste
- A splash of hot sauce (secret ingredient)
Instructions
- Prep your veggies: Peel and dice the potatoes, chop the onion, and mince the garlic.
- Toss it all in: In your crockpot, combine the potatoes, onion, garlic, and broth. Give it a good stir.
- Let it simmer: Set your crockpot on low and let it work its magic for 360-480 minutes, or on high for about 240 minutes.
- Almost there: About 30 minutes before serving, stir in the milk, shredded cheese, and sour cream.
- Final touches: Adjust seasoning with salt, pepper, and that secret hot sauce. Blend if you prefer a smoother texture, or leave it chunky!
- Serve up: Ladle into bowls and top with extra cheese or chives if you’re feeling fancy.
Notes
This soup pairs well with garlic bread or a fresh green salad. Experiment with garnishes like crispy green onions.
