Description
A rich and moist pumpkin bread infused with dark chocolate, perfect for breakfast or an afternoon treat.
Ingredients
Scale
- 1 cup canned pumpkin
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup dark chocolate chips
- 1/2 cup butter
- 1/2 cup cocoa powder (for frosting)
- 2 cups powdered sugar
- 3–4 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set it aside.
- Combine the pumpkin, sugar, and oil in a large bowl. Mix well until it’s silky smooth.
- Add the eggs, one at a time, whisking after each addition until fully incorporated.
- Whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon in a separate bowl.
- Fold the dry ingredients into the wet mixture gradually. Combine until you see no more dry flour.
- Stir in the dark chocolate chips gently.
- Pour the batter into your prepared pan and smooth the top.
- Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Beat the softened butter, cocoa powder, and powdered sugar together for the frosting, adding milk until your desired consistency is achieved. Spread generously over the cooled loaf.
Notes
For added flavor, consider using high-quality dark chocolate chips. Serve with whipped cream or vanilla ice cream for a special treat.
