Description
Sweet, buttery bars with a tart twist from fresh cranberries and a crunchy crumble topping.
Ingredients
Scale
- 1 cup Unsalted butter (browned)
- 1 cup Granulated sugar
- ½ cup Brown sugar
- 2 large Eggs
- 1 tsp Vanilla extract
- 1 ½ cups All-purpose flour
- 1 tsp Baking powder
- ½ tsp Salt
- 2 cups Fresh or frozen cranberries
- ¾ cup Rolled oats
- ½ cup Brown sugar (extra for topping)
- 1 tsp Cinnamon
Instructions
- Brown the Butter: In a medium saucepan over medium heat, melt the butter until it starts to foam and turns golden brown. This should take about 5-7 minutes. Watch it closely—it can go from perfect to burnt in a flash.
- Mix it Up: In a large bowl, combine the browned butter and sugars. Whisk until smooth, then beat in the eggs and vanilla.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Slowly add this mixture to the wet bowl and stir until just combined.
- Add the Cranberries: Fold in your cranberries gently—reserve a few to sprinkle on top if you’re feeling fancy.
- Make the Crumble: In a small bowl, mix the oats, flour, brown sugar, cinnamon, and a pinch of salt. Cut in some cold butter until it resembles small crumbs.
- Bake: Spread the batter into a greased 9×13 inch baking dish, sprinkle the crumble on top, and bake at 350°F for 30-35 minutes, or until a toothpick comes out clean.
- Cool & Cut: Let it cool completely in the pan before slicing. Trust me—impatience will lead to a crumbly mess!
Notes
Serve warm with a scoop of vanilla ice cream or drizzle with melted white chocolate for a decadent treat. Store in an airtight container at room temperature for up to 4-5 days.
