Ingredients

  • 1 can black beans
  • 1 can chopped tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp cumin

  • salt to taste
  • 4 cups chicken or vegetable broth
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

  1. Prep your ingredients: chop your onions and garlic and cut your protein into chunks.
  2. Layer your ingredients in the crock pot—start with the chicken, then add in beans, tomatoes, onions, and garlic.
  3. Sprinkle your spices evenly over the top, then pour in your broth until everything’s just covered.
  4. Set it! Cook on high for 4 hours or low for 6-8 hours.
  5. Before serving, shred your protein right in the pot; it’ll soak up all those delicious juices. Give it a good stir.
  6. Serve it up, and don’t forget those fresh herbs on top!
