Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, and eggs until smooth.
  3. Stir in the vegetable oil and vanilla extract.
  4. In another bowl, combine the flour, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Don’t overmix; a few lumps are okay!
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool for 10 minutes before transferring it to a wire rack to cool completely.
