Ingredients
- Beef chuck roast (about 3-4 lbs)
- Onions (4 large, sliced)
- Garlic (4 cloves, minced)
- Beef broth (4 cups)
- Thyme (fresh or dried)
- Rosemary (fresh or dried)
- Salt (to taste)
- Pepper (to taste)
- Olive oil (for browning)
Instructions
- Preheat your oven to 325°F (160°C).
- Season the roast generously with salt and pepper.
- Sear the meat in a hot Dutch oven with olive oil for about 5-7 minutes on each side.
- Remove the roast and toss in the sliced onions and garlic. Cook until caramelized, about 10 minutes.
- Add the herbs and beef broth, scraping the fond from the bottom. Return the roast to the pot.
- Cover and transfer to the oven for 3 hours.
- Let it rest for 15 minutes before serving.
Notes
For added flavor, consider a splash of red wine in the broth. Pair with creamy mashed potatoes or noodles.
