A creamy and cheesy casserole combining the flavors of French onion soup with potatoes, perfect for gatherings and comfort food cravings.

- 2 lbs frozen hash browns, thawed and dried
- 1 large onion, finely chopped
- 1 cup sour cream
- 1 can cream of chicken soup (or mushroom for vegetarian)
- 2 cups shredded cheese (preferably cheddar)
- 1 tbsp garlic powder
- 1/2 tsp black pepper
- 1/4 cup butter, melted
- 2 cups crushed cornflakes
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the thawed hash browns, chopped onion, sour cream, cream of chicken soup, 1.5 cups of cheese, garlic powder, and black pepper in a large mixing bowl.
- Pour half of the potato mixture into a greased 9×13-inch baking dish, spreading it evenly. Layer with the remaining potato mixture.
- Combine the crushed cornflakes with melted butter and the remaining 0.5 cup of cheese. Sprinkle this mixture over the top of the casserole.
- Bake for 40-45 minutes, or until bubbly and golden brown on top.
Notes
For added flavor, sauté the chopped onion in butter before mixing. You can replace sour cream with Greek yogurt if needed.
