- 1.5 pounds chicken breast, cut into chunks
- 2 tablespoons olive oil
- 4 cloves fresh garlic, minced
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt & pepper, to taste
- Skewers (soak wooden ones in water if grilling)
Instructions
- Marinate the chicken: In a bowl, combine olive oil, minced garlic, grated parmesan, lemon juice, oregano, salt, and pepper. Add the chicken chunks and mix well to ensure they’re coated. Let this sit for at least 15 minutes.
- Skewer it up: Thread marinated chicken onto skewers, giving a little space between pieces for even cooking.
- Preheat the grill: Fire up your grill to medium-high heat.
- Grill time: Place skewers on the grill. Cook for about 5 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
- Serve it right: Once cooked, remove from the grill and let rest for a few minutes.
Notes
For best results, marinate the chicken for a few hours or overnight. Add veggies like bell peppers and onions to the skewers for extra flavor.
