Description
A vibrant bowl filled with juicy marinated chicken, crunchy veggies, and creamy dressing, perfect for a satisfying meal.
Ingredients
Scale
- 2 Boneless, skinless chicken breasts
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 2 tbsp Lemon juice
- 1 tsp Oregano
- Salt and pepper to taste
- 1 cup Quinoa or rice
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, diced
- 1 Red onion, diced
- 1/2 cup Feta cheese, crumbled
- 1/2 cup Kalamata olives
- Fresh parsley, chopped
Instructions
- Marinate the chicken: In a bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Toss the chicken in, ensuring it’s well-coated. Let it sit for at least 15 minutes.
- Cook the grains: While the chicken marinates, prepare your quinoa or rice according to package instructions.
- Sauté the chicken: Heat a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F. Slice it once it’s rested for a few minutes.
- Prep veggies: While the chicken cooks, chop your cherry tomatoes, cucumber, red onion, and parsley. Toss them together for a fresh salad.
- Assemble your bowl: Start with a scoop of quinoa or rice, layer on the sliced chicken, top with the veggie mix, sprinkle feta cheese, and add kalamata olives.
- Drizzle and serve: Finish with a drizzle of olive oil or a homemade dressing if you like. Enjoy!
Notes
This dish is great on its own but pairs well with tzatziki or a crisp green salad.
