Description
A hearty bake of crispy potatoes topped with juicy seasoned beef and colorful veggies—a family favorite that’s nutritious and delicious.
Ingredients
Scale
- 4 medium potatoes, diced
- 1 lb ground beef
- 1 bell pepper, chopped
- 1 medium onion, diced
- 1 cup frozen peas
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the potatoes: In a large pot of boiling water, cook the diced potatoes for about 10 minutes until just tender. Drain and set aside.
- Sauté the beef: In a large skillet, heat the olive oil over medium heat. Add onion and bell pepper; sauté until soft, about 5 minutes. Then, add in the ground beef, breaking it apart as it cooks. Season with garlic powder, paprika, salt, and pepper.
- Add the peas: Once the beef is cooked through, stir in the peas, cooking for another minute or two.
- Combine everything: In a large mixing bowl, combine the cooked potatoes with the beef mixture. Mix until it’s all well incorporated.
- Assemble the bake: Pour the mixture into a greased baking dish and sprinkle cheese evenly on top.
- Bake: Place the dish in the oven for 20-25 minutes or until the cheese is bubbling and golden.
- Serve hot: Deliciously gooey cheesy layers await!
Notes
For best results, serve straight from the oven. A dollop of sour cream or fresh parsley elevates the dish. Store leftovers in an airtight container in the fridge for up to 3 days.
