- 1 cup canned pumpkin puree
- 1 cup sugar (or brown sugar)
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1/4 cup water
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp pumpkin pie spice
- Optional: chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, sugar, and oil until well mixed.
- Add in the eggs, one at a time, beating well after each addition, then pour in the water.
- In another bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin spice.
- Gradually add the dry mixtures to the wet ingredients, stirring until just combined.
- Pour the batter into a greased loaf pan and place a pan of water on the lower rack.
- Bake for about 60 minutes, or until a toothpick comes out clean. Let it cool before slicing.
Notes
For the best texture, do not skip the steam trick and measure flour correctly.
