- 4 large potatoes, peeled and cubed
- 1 small head of cabbage, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 6 cups beef broth (homemade is best)
- 4 slices beef bacon, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped beef bacon and cook until crispy.
- Remove the bacon bits from the pot and set aside, leaving the rendered fat.
- Add diced onions and sauté until soft and translucent, about 3-4 minutes.
- Toss in the minced garlic and cook for another minute until fragrant.
- Add chopped cabbage and cubed potatoes, stirring for a couple of minutes.
- Pour in the beef broth and bring to a boil.
- Reduce heat and let simmer for about 20-25 minutes, until potatoes are fork-tender.
- Using an immersion blender, purée the soup until smooth and creamy.
- Stir in the reserved crispy bacon bits, add salt and pepper to taste, and serve hot.
Notes
Homemade beef broth significantly enhances flavor. Pair with crusty bread for dipping.
