- 2 large russet potatoes
- 1 lb steak (flank or sirloin)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Sour cream
- Chives or green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly, prick them with a fork, rub with olive oil, and sprinkle with salt. Bake for about 45 minutes until fork-tender.
- Cut the steak into bite-sized pieces and toss in a bowl with olive oil, garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium-high heat, add the steak bites, and sear for 3-4 minutes until desired doneness.
- Slice the baked potatoes open, fluff the insides, and top with steak bites, cheese, then return to the oven until cheese is melty.
- Finish with sour cream and chives or green onion. Dive in!
Notes
Marinating the steak for a couple of hours can enhance the flavor. Adding avocado or hot sauce for extra flavor is recommended.
