- 4 large russet potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 ½ cups shredded cheddar cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Green onions and sour cream for garnish
Instructions
- Sauté the chopped onions and minced garlic in a little olive oil over medium heat until they’re soft and fragrant, about 5 minutes.
- Add the diced potatoes to the pot and pour in the chicken broth. Bring it all to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are fork-tender, use a potato masher or an immersion blender to mash the soup to your desired creaminess, leaving some chunks for texture.
- Stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is melted and everything is well incorporated. Season with salt and pepper to your liking.
- Serve hot, garnished with chopped green onions and a dollop of sour cream.
Notes
For extra flavor, don’t skip sautéing the onions and garlic. Feel free to play up the toppings with additional cheese, crispy croutons, or chives.
