- 1 can black beans, rinsed and drained
- 1 cup brown rice (or quinoa for a lighter option)
- 1 cup corn (fresh, frozen, or canned)
- 1 bell pepper, diced
- 1 small red onion, diced
- 1 avocado, diced
- Fresh cilantro, for garnish
- Juice of 1 lime
- Taco seasoning (or spices like cumin, paprika, and chili powder)
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, combine the chicken breast, taco seasoning, lime juice, salt, and pepper. Let it sit for at least 15 minutes.
- Cook the chicken: Heat a non-stick skillet over medium-high heat. Sear the marinated chicken for about 6-7 minutes on each side until it’s fully cooked and has that beautifully golden color. Let it rest before slicing.
- Prepare the rice: While the chicken is cooking, prepare the brown rice according to package instructions. If you’re using quinoa, it usually cooks a bit faster—about 15 minutes!
- Sauté the vegetables: In the same skillet, toss the diced onion and bell pepper for 3-4 minutes until tender. Add the corn and cook for another minute.
- Assemble your bowls: Start with a layer of rice, topped with the black beans, sautéed veggies, sliced chicken, and avocado. Don’t forget to sprinkle fresh cilantro on top!
