- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil

- 1/2 tsp salt
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Whisk together your wet ingredients: maple syrup, pumpkin puree, eggs, and vegetable oil in a large bowl until creamy.
- Combine the flour, baking soda, baking powder, spices, and salt in another bowl. Mix until integrated.
- Fold the dry ingredients into the wet mixture gently, stirring just until combined; lumpy is good.
- If using nuts, stir them in just before pouring the batter into the prepared loaf pan.
- Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
To deepen the flavor, consider toasting your nuts before adding them to the batter. Avoid overmixing to prevent a tough loaf.
