Ingredients

- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 lime, juiced
- Salt and pepper to taste
- 1 cup cooked rice or quinoa
- 1 bell pepper, chopped
- 1 cup corn (fresh or frozen)
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions
- Toss the shrimp with olive oil, garlic, cumin, smoked paprika, lime juice, salt, and pepper in a medium bowl. Let marinate for 15 minutes.
- Heat a skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side until pink and opaque.
- Prepare your base in bowls with rice or quinoa.
- Layer the shrimp over the base and add chopped bell pepper, corn, and sliced avocado.
- Garnish with fresh cilantro and additional lime juice.
