- 1 cup canned pumpkin puree

- ½ cup vegetable oil or melted coconut oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- Optional: chocolate chips or nuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash your bananas thoroughly in a large mixing bowl. Add in the pumpkin, sugar, oil, eggs, and vanilla extract; mix until smooth.
- Whisk together the flour, baking soda, baking powder, salt, and spices in a separate bowl.
- Fold the dry ingredients into the wet mixture—just incorporate until you see no flour streaks.
- Add chocolate chips or chopped nuts if desired.
- Pour the batter into the prepared pan and smooth the top.
- Bake for approximately 60 minutes, or until a toothpick comes out clean.
- Cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
