Description

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the sugars, eggs, and vegetable oil until combined.
  3. Stir in the pumpkin puree.
  4. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture. Stir just until moistened.
  6. Pour the batter into the prepared loaf pan and pop it in the oven.
  7. Bake for about 50 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a delicious twist, try adding chocolate chips or nuts. Store wrapped tightly at room temperature for up to 5 days or freeze for up to 3 months.
