  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 2 cups mixed frozen vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 3 cups chicken broth
  • 1 cup gnocchi
  • ½ cup heavy cream
  • Fresh parsley for garnishing

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Then, add the garlic and cook for an additional minute.
  2. Toss in the shredded chicken along with your frozen veggies, thyme, rosemary, salt, and pepper. Stir for another 2-3 minutes.
  3. Pour in the chicken broth and bring to a simmer. Lower the heat and let it bubble gently for about 10 minutes.
  4. Add the gnocchi and heavy cream, then continue simmering for another 5-7 minutes or until cooked through.
  5. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
