- ½ cup all-purpose flour
- ½ cup brown sugar
- ¼ cup cold butter, cubed
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt until well blended.
- Combine the wet ingredients: In another bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla until smooth.
- Fold wet into dry: Gently stir the wet mixture into the dry ingredients until just combined. Don’t overmix; a few lumps are okay!
- Prepare the crumb topping: In a small bowl, combine the flour, brown sugar, cinnamon, and cubed butter. Use a fork or your fingers to mix until crumbly.
- Assemble: Pour the pumpkin batter into the greased pan and sprinkle the crumb topping liberally over the top.
- Bake for about 60 minutes, or until a toothpick comes out clean. Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Notes
For extra indulgence, serve warm with cream cheese or butter. Can add chocolate chips or nuts for extra texture.
