- 2–3 tablespoons maple syrup

Instructions
- In a large mixing bowl, whisk together your pumpkin puree, almond milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
- Once everything’s blended nicely, stir in the chia seeds.
- Pour the mixture into individual serving jars or one large bowl, then pop it into the fridge. Let it chill for at least 4 hours or overnight.
- After chilling, give it another quick stir and add almond milk if needed.
- Serve with your favorite toppings like nuts, granola, or extra pumpkin spice.
Notes
This pudding can last in the fridge for about 5 days. Stir before serving. For enhanced pumpkin flavor, roast fresh pumpkin first.
