A refreshing salad with tender shrimp, creamy avocado, and zesty lime, perfect for light lunches or summer gatherings.
Ingredients
Scale
- 1 pound shrimp, fresh or thawed
- 1 ripe avocado, sliced
- 4 cups mixed greens (lettuce or spinach)
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1/4 cup cilantro, chopped (optional)
- 1 lime, zested and juiced
- 3 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Prep the shrimp: Season with salt, pepper, and a bit of lime juice.
- Cook the shrimp: Heat olive oil in a pan over medium-high heat. Sauté the shrimp for about 2-3 minutes on each side until they’re pink and opaque.
- Chop the veggies: While the shrimp cooks, slice the avocado, tomatoes, and onion.
- Make the dressing: Whisk together olive oil, lime juice, zest, salt, and pepper in a bowl.
- Combine everything: In a bowl, toss greens with shrimp, veggies, and dressing before serving.
Notes
Best enjoyed fresh, can be stored in the fridge for up to 2 days. Keep dressing separate until serving to avoid sogginess.
