Ingredients

- 4 boneless, skinless chicken thighs or breasts
- 1 cup rice (jasmine or long-grain)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup mixed vegetables (fresh or frozen)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: fresh herbs like parsley or thyme for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, and sear it for about 5 minutes on each side, until golden brown. Remove and set aside.
- In the same skillet, toss in the diced onion and garlic. Sauté for about 3 minutes until fragrant and translucent.
- Add the rice and stir it into the onion and garlic mixture, letting it toast for a minute.
- Pour in the chicken broth and bring to a gentle simmer. Nestle the chicken back into the skillet along with the mixed veggies.
- Cover and let it simmer on low for about 30 minutes, or until the rice is tender and has absorbed all the liquid.
- Once everything is cooked, fluff the rice, adjust seasoning if necessary, and garnish with fresh herbs before serving.
Notes
Leftovers can be stored for up to 3 days in an airtight container. Reheat gently on the stove with broth or water.
