  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda

  • 1 tsp salt
  • 2 tsp pumpkin pie spice
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth in a large bowl.
  3. Whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice in another bowl.
  4. Fold the dry ingredients into the wet ingredients gradually. Add the sour cream and mix until just combined.
  5. Pour the batter into your prepared loaf pan.
  6. Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
