Delicious sweet potatoes filled with a savory taco-inspired filling featuring ground beef, black beans, and corn.

- 4 medium sweet potatoes
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- Toppings: shredded cheese, avocado, salsa, cilantro, lime wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the sweet potatoes, poke them with a fork a few times, and wrap them in foil. Place on a baking sheet and roast for about 40 minutes, or until tender.
- Heat a skillet over medium heat and add a splash of oil. Sauté the onion until soft, then toss in the garlic; cook for an additional minute.
- Add the ground beef to the skillet and break it apart with a spatula. Cook until browned, stirring occasionally. Drain excess fat if necessary.
- Stir in the black beans, corn, and taco seasoning to the beef mixture. Cook for another 5 minutes until everything is heated through.
- Once the sweet potatoes are done, slice them open lengthwise and give them a slight squeeze to fluff them up. Spoon the beef mixture generously into each potato.
- Top with your choice of cheese, avocado, salsa, or other toppings. Serve immediately!
