Description
A spicy and crunchy fusion of Thai beef with cashew nuts that’s perfect for weeknight dinners or gatherings.
Ingredients

- 1 lb ground beef
- 3 cloves garlic, minced
- 2 tbsp Thai chili paste
- 1 cup unsalted roasted cashews
- 1 bell pepper, diced
- 1 onion, chopped
- 1/4 cup cilantro, chopped
- 2 tbsp soy sauce
- 1 lime, juiced
Instructions
- Heat a splash of oil in a large skillet over medium heat. Add the ground beef, season with salt, and cook until browned, about 5-7 minutes.
- Toss in the garlic and onion, sautéing until fragrant and the onion softens.
- Add the diced bell pepper and cook for another 2-3 minutes until it starts to soften.
- Stir in the chili paste and soy sauce, making sure all the beef is coated. Cook for an additional 2-3 minutes.
- Remove from heat and fold in the cashews and cilantro. Squeeze in lime juice to taste.
- Serve hot either over rice or on its own, garnished with more cilantro if desired.
Notes
For a unique twist, consider using ground turkey or chicken instead of beef. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
